Here’s a super simple spicy falafel recipe that can be made with minimal ingredients and in a short amount of time!
I always find myself baking or creating sweet food when I want to cook something, but I’m changing that and am going to tackle more savoury foods such as these amazing falafel which I’ll now be adding to my favourites.
1 can of chickpeas (rinsed, drained and patted dry)
3 cloves of minced garlic
1 small red onion
1tsp cayenne pepper
1tsp ground coriander
1tsp chilli flakes
1tsp fresh mint
1 medium egg (or vegan alternative)
1 tbsp plain flour
Pinch of salt and pepper, to taste
Vegetable oil, to brush
Pre-heat oven to 200°C.
Blend onion and garlic together in a food processor.
Add all the other dry ingredients into the blender and pulse blender until well broken down and mixed.
Add the egg and plain flour and blend further, the mixture should be paste-like.
Dust hands with flour and form into small balls, or into burger shapes. Place on a baking tray and squish slightly; brush lightly with vegetable oil.
Bake for 20-25 minutes, turn them over half-way through to ensure both sides get crispy. Make sure the falafel are hot all the way through and crispy around the edges.
Notes: Serve with salad, in a pitta or in a wrap or enjoy on their own with my Easy Garlic Tzatziki Dip. This goes great with a spinach and walnut salad, mixed with fresh veg, and pomegranate seeds.
